David Boxer , formerly The University of Dundee's Vice-Principal for Research and Enterprise and Professor of Microbial Biochemistry, became Director of the Institute of Food Research (IFR) and Professor of Microbial Metabolism at the University of East Anglia in 2009. Professor Boxer has extensive experience in university management and in research, having held a number of positions at Dundee including Dean of Science and Engineering and Chairman of the Biochemistry Department. The directorship of IFR is a joint appointment between the University of East Anglia and the Biotechnology and Biological Sciences Research Council.

The research at IFR is focused on the physical and chemical nature of food and how it interacts with the body to influence health. Through two main programmes “Food and Health” and “Gut Health and Food Safety” researchers at IFR are advancing understanding in:

  • the fundamental biological processes within the gut, involving the interaction between food, the microbes that live in the GI-tract (microbiota) and the human gut epithelium
  • how nutrients and other food components pass into the blood stream and affect our health
  • the survival and growth of foodborne microbial pathogens
